What is different about Pearse Lyons Distillery is that it has its own Single Malt stock of age to sell to the market. This is from when the stills that were set up in Carlow waiting to be moved to their final pride of place at the altar of St James Church. Some of this new DNA Irish Whiskey is in two of the Pearse Whiskeys: The Original and Distillers Choice.
A blended Irish Whiskey aged in all Bourbon barrels averaging 3-5 years Grain & Malt blend. This Whiskey has single malt in it that has been produced on the stills that you are looking at in the Church but also sourced Malt & Corn Grain whiskey. On the nose this is a relaxing whiskey with a slightly citrus note and a light whisp of smoke. It has mellow malt tones and has an aroma of light honey fruits with floral notes.
This whiskey is Predominately a Malt Whiskey with a small amount of grain in the blend. Both the Malt and Grain whiskey was initially aged in bourbon casks then vatted together and re-casked into first fill sherry barrels. On the nose you can get, Dried orange, treacle, deep charred wood, pineapple and lemon peel to start. Followed by mellow coffee and chocolate biscuit with a hint of gingerbread.
On the nose this Irish Whiskey ripens with orchard fruits of white peach, apple and a tingle of spiced pear that come together to produce herbal and pine notes. Hints of lemon, dried orange and a touch of honeysuckle can be experienced from this 12 year old single malt.
A blend of 7 different Grain & Malt Whiskeys. It is predominantly aged in Bourbon barrels with some Sherry barrel aged whiskeys in the mix. It is a 4-9 year-old blend. This Whiskey has single malt in it that has been produced on the stills that you are looking at in the Church but also sourced Malt & Corn Grain. On the nose this specially blended Irish Whiskey gives fresh citrus and piny notes with subtle spices and dried fruits giving a light fruit cake finish.
